Elevenses Co is a project as imagined by barista and baker Jade Yelvington.
​
With a pastry chef for a mom, Jade truly grew up in the food industry (surrounded by it, as well as working in it from a young age). Ironically, it was something she said she'd never pursue professionally... until she discovered latte art which led her to the world of craft coffee with which she promptly fell in love.
​
While she's always enjoyed and greatly appreciated sweets, her love of baking took a little longer to manifest, but once it did there was no turning back. It really all started with one idea, for a slightly unusually flavored cake (cranberry, corn, and basil) that put her on the path to develop her own recipes.

Jade's baking style is deeply influenced by her upbringing and rooted in, above everything else, a commitment to quality and scratch made desserts and cakes. If there's a true happy medium between nostalgic homemade desserts you might find in your grandma's kitchen, and odd flavor combinations that you don't see everywhere- that's where we'd like to be. Floating around in a world full of beautiful, tasty, slightly quirky treats.

Elevenses is a cutie lil' neighborhood bakery, nestled in historic and beautiful VM Ybor.

We are a small-batch from-scratch bakery, and third-wave multi-roaster coffee shop!
Open Wednesday - Friday 12-6pm and Saturday 11am - 4pm, you're welcome to come by for treats and coffee/drinks (with or without an order, but online ordering is available for those who like to plan ahead!) any time during store hours.
Menus change frequently (whether seasonally, or because we're experimenting, or running a themed menu, you can always expect us to be having fun while serving up delicious bakes), but you can always count on a wide variety of baked goods (macarons, cookies, brownies, cakes, rolls, and specials like soft pretzels, pavlovas, pies, etc).
Our coffee program is just as special to us as our baked goods. We offer two espressos daily (one elevated but still more "coffee" forward option, and one more experimental option, often a co-ferment, or something super funky and likely super fruity). We are proud to feature roasters such as Brandywine, Black and White, Sunday Coffee Project, Tandem, Sump, Wuz Here, (and more).
Shots are pulled on a Synesso MVP Hydra, and we also have slow bar options (off menu but available for those who ask), Hario V60, Origami, and Aeropress + single origin drip, flashbrew, cold steeped teas, and homemade sodas along with other seasonal specials and seasonal flavored lattes.

what does Elevenses mean?
"Elevenses" is a British term meaning : a short break for light refreshments, usually with tea or coffee, taken about 11 o'clock in the morning.​
you might also recognize it as a Lord of the Rings reference.
Pippin: "What about Elevenses? luncheon? afternoon tea? dinner? supper? he knows about them, doesn't he?"
so why don't you open at 11?
short answer is: (while there have been some complications to extending our hours to be open earlier) we're working on it!
where can I see your menu today/can I order online?
you can find our daily menu here, which is also where you can order online! unless we're running a themed or holiday-only menu, in which case you can order from our hotplate
do I have to order online?
on a normal business day, no absolutely not! it never hurts to order online if there's something in particular you have your eye on (we do sell out, particularly on weekends), but you don't need an order to come by EXCEPT for times where we are running on order-only menu (which we will do for our most popular themed menu drops, outside of normal business hours as to best avoid confusion or disruption to normal daily business).
are you allergen friendly?
while we will always try to accommodate any allergy related requests if we're able, we do process nuts and wheat/gluten in our kitchen, and so can't guarantee 100% allergen free baked goods. please proceed on the side of caution for any extreme allergies or sensitivities.
similarly, while we are happy to offer a few plant-based options daily, we are not a vegan bakery and do process dairy in the kitchen.
where do we park?
there is plentiful free street parking on columbus dr. and the streets surrounding the bakery!
holiday menus/events/themed menus
where can I see the holiday menus/order online from the holiday or themed menus?
all of our limited menu drops (which covers all of our GG menu runs, holiday menus, and general pre-ordering for themed menus) are released on our hotplate here.
you can sign up for notifications through hotplate, in doing so you'll be texted when a new menu is about to drop!
do you have a schedule for themed menus?
except for January, which is our shop birthday and when we run our annual LOTR themed, we do not have a set schedule for themed menus throughout the year, as they are often scheduled to not conflict with holidays or other events. we are very active in posting on our social media whenever we have an upcoming theme or event to look out for!
do you sell any items from the themed menus daily?
our menu (as far as the variety of baked goods, quality, and thoughtfulness) is the same on a day-to-day basis as it is on a themed day (the difference is, for a theme, we build the flavors as references to characters, or recreations of noteworthy food items referenced in the particular show/movie/book we're emulating). while it may not be featured, we keep some of the art/books/little easter eggs around the store after every theme we do for those who are looking, and you can always purchase the "luke's" stickers for your cups or boxes (for funsies and photo ops)
macarons
are your macarons gluten free?
yes they are! macarons are naturally gluten free, and we never use ingredients/filling with gluten in any of our flavors
what macaron flavors do you have?
we offer 12 different flavors of macarons daily in store, and are always creating new flavors! we used to try to have a master list of flavors, but honestly we rotate through flavors (particularly featured seasonal flavors) too quickly to keep up with a posted menu anywhere. some of our most popular flavors (which you can almost always find at least a couple of these in store) are: ube vanilla, ny cheesecake, lembas bread, black coffee, fruity pebbles, and thai tea
can we order macarons in advance/in larger quantities?
yes! we'd be happy to take a macaron order for you. the best way to do so (and to inquire about the current flavor selection) is by emailing
macarons are $3.5 ea or $38 per dozen. at the moment we do not offer custom flavors or colors/shapes/designs for macarons

care instructions
do you have any care instructions?
the general rule of thumb is that desserts and cakes need to be kept refrigerated until around the time of serving. all baked goods are extremely meltable on 98% of days in our FL weather without proper refrigeration/AC so do not leave it in your car for extended periods of time (ie running errands or making extra stops on the way to your destination)!
for transportation: cakes and desserts should be placed on a flat and level surface (no tilted car seats!) with the AC on.
we are not responsible for any damage that happens once your order leaves our care, so please heed these handling instructions carefully!
cake specific care instructions
everything stated above + always keep cakes cool, and on a level surface while transporting and once they've reached their final destination.
cakes should be kept refrigerated until about one-two hours before serving (if indoors) or ideally no more than an hour before serving if it will be displayed outside.
our cakes are made with primarily buttercream or cream cheese icing, both of which are highly meltable in hot weather- so please use your best judgement for any outdoor events.
​any leftovers can be stored in an airtight container- refrigerated will keep for up to a week and frozen for a couple of months (if they last that long).
macarons
macarons should be stored in airtight containers in the refrigerator or freezer, but are best eaten at room temperature!
they will keep for a couple of days at room temperature, up to two weeks in the fridge, or up to three month in the freezer.
desserts
pavlova, custard based pies, or anything with whipped cream should always be refrigerated.
other desserts (brownies, cakies, cookies, etc) may be stored in the fridge for up to a week but can be served at any temp you prefer (cold, room temp, warmed up)
